Raspberry Coconut Quinoa Porridge (vegan + gf)
Vegan breakfasts can get boring. I can only eat smoothies & oatmeal so many times before I'm forced to get creative. This has been one of my go to breakfasts when I want something satisfying, easy, and delicious.
- 1/2 cup quinoa
- 14 ounces full fat coconut milk
- 1 tbsp chia
- coconut flakes
- sunflower seeds
- hemp seeds
- almonds (chopped)
Feel free to play around with the toppings! I've done blueberry and walnut and banana chocolate chip.
