Cornbread Muffins (vegan + gluten free)
This cornbread is moist delicious and insanely easy to make. Making them goes great with chili or even as a snack.

Ingredients
- 1 1/2 cup gluten free all purpose flour (bob's red mill 1 to 1 is my fav)
- 1 cup cornmeal (fine or medium grind)
- 2/3 cup cane sugar
- 1 tsp salt
- 1 tbsp baking powder
- 1 1/4 cup oat milk (or other alt milk)
- 1/3 cup olive oil
Instructions
- Preheat oven to 400 F
- In a large bowl, mix flour, sugar, cornmeal, salt, and baking powder
- Then add olive oil and oat milk
- Pour into muffin tin filling about 3/4 of each round
- Bake for 20 minutes
