Cornbread Muffins (vegan + gluten free)

This cornbread is moist delicious and insanely easy to make. Making them goes great with chili or even as a snack.

Ingredients
  

  • 1 1/2 cup gluten free all purpose flour (bob's red mill 1 to 1 is my fav)
  • 1 cup cornmeal (fine or medium grind)
  • 2/3 cup cane sugar
  • 1 tsp salt
  • 1 tbsp baking powder
  • 1 1/4 cup oat milk (or other alt milk)
  • 1/3 cup olive oil

Instructions
 

  • Preheat oven to 400 F
  • In a large bowl, mix flour, sugar, cornmeal, salt, and baking powder
  • Then add olive oil and oat milk
  • Pour into muffin tin filling about 3/4 of each round
  • Bake for 20 minutes
