- 2 cups hot water
- 1/2 cup raw cashews (soaked fo
- 2 dates (pitted)
- 1 tsp vanilla extract
- 3 tbsp cocoa powder
- 1-2 drops peppermint essential oil (or 1/4 tsp peppermint extract)
optional
- vegan marshmallows
- coconut whipped cream
- chocolate shavings
Instructions
- Blend water and cashews in strong blender
- Add dates, vanilla, cocoa powder, peppermint oil and blend
optional
- top with marshmallows, whipped cream, and/or chocolate shavings

This recipe can be made into a vegan hot chocolate by omitting the peppermint.
It can also be made into a "Mayan Hot Chocolate" by omitting peppermint and adding a pinch of cinnamon and cayenne.
