Ingredients
  

  • 2 cups hot water
  • 1/2 cup raw cashews (soaked fo
  • 2 dates (pitted)
  • 1 tsp vanilla extract
  • 3 tbsp cocoa powder
  • 1-2 drops peppermint essential oil (or 1/4 tsp peppermint extract)

optional

  • vegan marshmallows
  • coconut whipped cream
  • chocolate shavings

Instructions
 

  • Blend water and cashews in strong blender
  • Add dates, vanilla, cocoa powder, peppermint oil and blend

optional

  • top with marshmallows, whipped cream, and/or chocolate shavings

Notes

This recipe can be made into a vegan hot chocolate by omitting the peppermint. 
It can also be made into a "Mayan Hot Chocolate" by omitting peppermint and adding a pinch of cinnamon and cayenne.
